Fall is that time of year when having a plan, and answering the question, “What’s for dinner?” is imperative for me.  I have found that menu planning removes the daily stress of finding something to cook for dinner and replaces it with peace.

This particular recipe incorporates both veggies and protein into one dish.  You are well on your way to creating a balanced, healthy and delicious dinner!  I hope this quick and easy recipe makes its way to your meal plan this fall.

Sloppy Joes are traditionally served on a bun.  In this photo, they are being served on my gluten free/dairy free/egg free bun.   As an alternative to bread, you could also serve this atop mashed potatoes, mashed cauliflower, rice, or even scoop up with potato chips!  If you like video tutorials, you can find a link for this recipe at abundantlyfreecooking.com.

SLOPPY JOES

2 c ground beef (turkey, buffalo, and venison would also work)

2 bell peppers, chopped

1 c chopped onion

4-5 garlic cloves, chopped

2 T chili powder

1 tsp salt

2 T honey

1- 15 oz can tomato sauce

Brown ground beef over medium high heat.  Drain fat.  Add peppers, onions, and garlic.  Cook, stirring occasionally, 3-5 minutes.  Stir in chili powder and salt.  Cook another 1-2 minutes.  Add remaining ingredients.  Stir, cover, and reduce heat to low.  Simmer, stirring occasionally, until peppers and onions are soft, about 10 minutes.  Taste.  Add more honey if too spicy and simmer another minute.
